One of the most identifiable aspects of various countries is their manner of drinking tea and the associated culture. Tea and coffee make excellent camp beverages on cold mornings, an afternoon break, or when returning from an autumn hike.
No matter where you travel, whether to a foreign land or your local state park, sitting with people, family, friends, or strangers, and enjoying a drink together is one of the nicest aspects of humanity.

Mali Tea Ceremony
Tea holds a vital place within the social tapestry of Malian society.

In Mali Tea Culture, the tea ceremony is a cultural activity involving the ceremonial preparation and presentation to honored guests and even strangers. The custom in Mali is to welcome people with green tea simmering with mint leaves.
The hot, sweet tea is poured from a small teapot into shot-glass size glasses from a great height in order to get a good head of foam on the tea. The glasses are then offered to guests, who slurp the tea loudly, to indicate politeness and respect for their host. Welcoming guests with tea is a sign of friendship in Mali.
In Mali's remote Mopti region at the Sahara Desert's edge, nearly 90 percent of the population are farmers who live below the poverty line. However, in Mali no matter the income status, greeting visitors with tea is a sign of welcome and friendship.

Gather the necessary supplies, you will need the following items:
A heat source (e.g., gas stove, wood-burning stove, campfire, portable gas burner)
A kettle or pot for heating water
Tea leaves or tea bags (most commonly "Chinese Special Gunpowder" tea
Cups or mugs
Water
Place the kettle or pot filled with water on the heat source. If you're using a gas stove, light the burner and adjust the flame to a medium or low setting. For a wood-burning stove or campfire, position the kettle or pot over the flames. Allow the water to heat until it reaches the desired temperature. Be cautious when handling the hot kettle or pot.
Once the water is hot, remove it from the heat source. Add tea leaves directly to the hot water or place tea bags into the pot. The amount of tea depends on personal preference and the strength desired. As a general guideline, use approximately 1 teaspoon of loose tea or 1 tea bag per cup of water.

Tiga Degué Na
Malian peanut sauce over rice is a favorite dish of our Captain. Make it ahead of time before you go, or slow cook it over the campfire.

Malian peanut sauce, or as many Europeans refer to it, "ground nut stew" (peanut is called ground nut in British English), is likely the most common dish eaten throughout francophone west Africa. It's rich taste and filling nature makes it a favorite lunch time meal for many.
Malian Tiga Degué Na
Prep time 45 mins | Cook time 1 hour | Serves 2-3
Ingredients for Tigua Degué
-
1/2-1 lb largely diced lamb or beef
-
1 chopped medium onion
-
3 finely chopped garlic cloves
-
1/2 cup of natural, unsweetened peanut butter
-
2 chopped tomatoes
-
1-1/2 Tbsp tomato paste
-
2 Tbsp of olive or peanut oil
-
1 carrot, peeled and cut into big pieces
-
1 medium potatoes, cut into large pieces
-
1 large sweet potato, cut into large pieces
-
cabbage wedge
-
1-2 scotch bonnet or habanero pepper
-
6 cups of water, you may need more or less, depending on how thick you want your broth
-
1 beef or lamb bouillon cube
-
1/2 Tbsp Coriander powder
-
2 Tbsp Smoked soumbala
-
Pepper and salt, to taste
-
Cilantro or Italian parsley for Garnish
Directions
-
In a large pot, heat the olive oil over medium heat and fry the meat until slightly browned. Remove and set Aside
-
In same pot, fry the onions in the olive oil and meat fat.

Add in tomato paste and garlic and cook for another 2 minutes
-
Add in the tomatoes, habanero , and peanut butter. Cook for 1-2 minutes

Add the water, seasoning cubes, soumbala, and meat pieces back into the pot. Bring to a rolling simmer.

Once simmering, add your potatoes and veggies, salt and pepper. Simmer on medium-low for 30-45 minutes, or until the sauce has reduced and the vegetables are steamed through.

Serve with white rice and garnish with cilantro (or Italian parsley) and habanero hot sauce.
